Kentucky Burgoo



Just the name of this feels super old school
in all the good ways.
This one will find its way into our kitchen lab
for sure if I have anything to do with it.

Salmon Patties Ole




I hate to say it but the thing that stood out to me the most
from this recipe was the back of it.

My inner middle schooler was in joke heaven.

Corned Beef and Cabbage



This is absolutely food for your soul.
Just make sure you open the windows
while you're cooking the cabbage..
and after you eat it...

Kale, Bacon, and Oatmeal Dish





I like bacon...
I like oatmeal...
I even like cooked kale...
Together though?
I don't think some marriages are meant to be.

Salmon Croquettes





I'm not sure I equate the word "Croquettes"
with a recipe from "The Old Days".
If by that, you mean the fairy tale times when you lived in a castle
with your family they ruled the land...then yes...
I can see you seeing this as a recipe from the old days.

Yes...I'm being a little judgy.

Pepper Steak






Pepper Steak...oh yeah.
Go ahead and sign me up for this one.
This one is already a winner in my eyes.







Mrs. Ellen Becks's Pancakes


Clearly these old pros only needed the ingredients.
The rest was just muscle memory for them.
who knows how many pancakes these ladies
made in their lifetime.

Sour Kraut Dumplings


I don't remember the lady that my granny is talking about
but she must've been on to something for granny
to write this recipe down.

A generational note...
My granny makes a reference to this person as "Colored Lady".
I remember hearing this as a kid it always
seemed to be used with the utmost respect.

Catfish


Nothing like a good catfish fry.

Salmon Puff


I swear this sounds like an off brand, "healthy" knock off of Cheetos.

This is one of those "not sure where this is going to land" recipes.

The mystery mix coming together.

Time to get this in a pan and see what bakes up.

We added some crunchy bread crumbs on top with some olive oil for some flavor and flair.

Baking this was more of a guesstimation than an exact science.

This dish baked up kinda thinner than expected.
So it's less puff and more low riding casserole.


The final result is more of a side type than a main dish.

Mods:
Added crunchy bread crumbs and olive oil.
Baking time could vary.

Final thoughts:
The jury is still out on this one.
Kiddos give a thumbs up.
I give it a half a thumb because it seems like it needs something else.
Head chef was not a fan at all.  We could make this with Tina and some other flavors which would be tastier and cheaper to make.

Turnip Green Fried Pies





I know I'm not the only one that has seen articles scanned online only to be curious about what was on the other side.  I'm not going to leave you in suspense.

We decided to take this recipe for a spin.
We took several creative liberties by using spinach instead of turnip greens, substituted crescent roll dough for the pastry mentioned, and used an air fryer in lieu of traditional frying.


We also threw in some cream cheese to add a little more texture and flavor.
Once we put the rolls in the air fryer, we left them in for 8 minutes, flipped them, and finished them out for 8 more minutes.


Oh...my...word...these were super tasty!!!


These lasted no time at all.


we still had quite a bit of mixture left over so we decided to make little nuggets by adding some corn muffin mix and baking them for 25 minutes.


Wow...did this little experiment turn out excellent!


These we're gobbled up quick too!

Mods:
Frozen spinach instead of turnip greens.
Crescent roll dough instead of pastry.
Air fryer instead of traditional fryer.
Added cream cheese.

Final thoughts:
We did take a lot of liberties with this recipe but boy did it pay off.
The crescent rolls turned out amazing and so did the nuggets.
A huge 4 thumbs up from all the family!
I can see this one becoming a family favorite in the future.

Cincinnati Chili


Almost as archaic as the recipes that were typed with an actual typewriter, here's one on the nearly extinct form of mail known as the postcard.
I'll have to say this has been a real piece of education for me.  I never knew that:
1.) Cincinnati is the chili capital of the USA
2.)  You can put this chili on almost everything.  
I'm totally going to chow down on the chili spaghetti.
That just sounds beastly.

Diet Low Fat Chicken


Given the almost endless amounts of super sweet desserts contained in this little green box, this recipe kinda seems out of place.  If you're like me though, this one dish can offset a multitude of sweet tooth sins.

Dinner was always an adventure when those two were in the kitchen.  

Mrs. Beck's husband Foxy (his nickname), was a Korean war veteran.
I spend so many evenings going through boxes of photo slides he had of anything from the war to an Indian reservation they once lived on.

My only guess to the origins of this paper is that it is somehow related to my granny's mother (my great grandmother).  Interesting how one word seems to stand out above the rest.   

La-Choy and Hamburger


My granny had a huge can of La-Choy vegetables in her canned food cabinet.
The same cabinet I organized for her dozens of times when I was growing up.
